140g Tofu (1 Cup), cubed
2 Pita Breads
1 Tomato, sliced
½ Red Onion, sliced
1 Garlic Clove, crushed
Zest and Juice of ½ Lemon
30ml Olive Oil (2 Tablespoons)
40g Greek Yoghurt (3 Tablespoons)
5ml Ground Coriander (1 Teaspoon)
5ml Ground Cumin (1 Teaspoon)
2.5ml Paprika (½ Teaspoon)
2.5ml Dried Oregano (½ Teaspoon)
2.5ml Dried Thyme (½ Teaspoon)
2.5ml Salt (½ Teaspoon)

Ingredients for the Tzatziki 🥒🧅🧄🍋🌿🫒
¼ Cucumber, grated
75g Greek Yoghurt (⅓ Cup)
15ml Olive Oil (1 Tablespoon)
1 Garlic Clove, crushed
Fresh Mint, chopped
Fresh Dill, chopped
Salt, to taste

Method 📖
1. Make marinade: In a blender, combine the onion, garlic, lemon zest and juice, yoghurt, coriander, cumin, paprika, oregano, thyme, and salt. Blend until smooth.
2. Marinate tofu: Cut the tofu into cubes and coat well with the marinade. Leave to marinate while the grill heats up.
3. Preheat grill: Heat the grill to its highest setting.
4. Grill tofu: Remove the Tofu from the marinade and spread the tofu onto a baking tray lined with parchment paper and grill for 5 minutes, or until golden and crispy.
5. Prepare tzatziki: Mix the grated cucumber, Greek yoghurt, olive oil, garlic, mint, dill, and a little salt until well combined.
6. Warm pitas: Warm the pita breads in the oven for a few seconds until soft.
7. Assemble gyros: Fill each pita with tzatziki, crispy tofu, sliced tomato, and red onion.

Serve: Enjoy immediately with hot chips or a fresh Greek salad.
