This Mediterranean classic is a perfect balance of flavour using spinach and feta cheese. Spinach may not be a favourite with little ones, but these are Oh so delicious, they wouldn’t even notice.

Ingredients 🥬🧅🧄🧀🥚🌿🫓🫒
• 5 Sheets Phyllo Pastry, folded over
• 2 Clumps Frozen Spinach, defrosted
• ½ Red Onion, finely diced
• 1 Garlic Clove, crushed
• 1 Egg
• 100g Feta Cheese, crumbled
• Pinch Grated Nutmeg
• 5ml Dried or Fresh Dill (1 Teaspoon)
• Olive Oil, for brushing
• Salt and Pepper, to taste
Method 📖
1. Preheat oven: Turn the oven on to 180°C (350°F) and line a baking tray with parchment paper.
2. Prepare vegetables: Finely dice the onion and crush the garlic.
3. Soften onion: Fry the onion gently in olive oil until soft and golden.
4. Add garlic and spinach: Add the garlic and cook for a couple of minutes, then add the spinach and cook thoroughly.
5. Cool mixture: Remove from the heat and allow the mixture to cool slightly.
6. Remove liquid: Transfer to a bowl and squeeze out any excess liquid using a colander or sieve.
7. Add cheese and egg: Mix in the feta cheese. Crack and check the egg, then stir it into the mixture.
8. Season filling: Add the nutmeg, dill, salt and pepper and mix well.
9. Prepare pastry: Lay one sheet of phyllo pastry on the work surface. Brush lightly with olive oil, fold over and brush again.
10. Fill and fold: Cut into 4–6 rectangles. Place 1 Tablespoon of filling onto each piece, then fold into triangles until all the pastry is used.
11. Bake: Place the triangles onto the prepared tray, brush the tops with olive oil and bake for 25 minutes until golden and crispy.
12. Serve: Serve hot with a fresh Greek salad on the side.

If you prefer to add Kale instead of spinach, that is an even better iron rich vegetable to use. Maybe you could even add a little bit of lemon squeezed onto the spinach once cooked.
