Spaghetti with Puttanesca Sauce

With the Risque name (Puttana is a prostitute in Italian), this classis dish is completely flavoursome and uses ingredients that are often overlooked, but much healthier for low salt diets.

Ingredients 🍝🍅🧄🐟🫒🌿🌶️🧂
Spaghetti
• 30ml Olive Oil (2 Tablespoons)
• Anchovy Fillets
• 1 Garlic Clove, crushed
• 2.5ml Chilli Flakes (½ Teaspoon)
• 1 Can Crushed Tomatoes (1½ Cups)
• 5ml Sugar (1 Teaspoon)
• 15ml Capers (1 Tablespoon)
• 35g Olives (¼ Cup), sliced
• 5ml Oregano (1 Teaspoon)

Method 📖
1. Heat oil and anchovies: Heat the olive oil in a large pan and add the anchovy fillets. Stir until they break down into the oil.
2. Add garlic and chilli: Add the crushed garlic and chilli flakes and cook gently for a few minutes, taking care not to burn the garlic.
3. Add tomatoes: Pour in the crushed tomatoes and add the sugar. Stir well.
4. Simmer sauce: Reduce the heat and allow the sauce to simmer for about 10 minutes.
5. Prepare pasta: Bring a saucepan of water to the boil and cook the spaghetti until al dente.
6. Add olives and capers: Slice the olives into rings and add them to the sauce along with the capers and oregano. Cook for a further 10 minutes.
7. Combine: Drain the spaghetti using a colander, then add it directly into the sauce and mix well.

Serve hot. The sauce is naturally salty and full of flavour without tasting fishy.
