This is what you will need for this recipe: 🥣 🥄
Ingredients 🥔🫑🫒🌱🥚🧂⚫🧀
• 125g Potato, peeled and diced (1 Cup)
• 75g Red Pepper, deseeded and diced (½ Cup)
• 1 Tablespoon Olive Oil
• 2–3 Spring Onions, finely chopped (¼ Cup)
• 2 Tablespoons Chopped Flat-Leaf Parsley
• 3 Eggs, beaten
• Salt and Black Pepper to taste
• 30g Grated Cheddar Cheese, optional (¼ Cup)
Method 📖
1. Preheat the oven to 180°C (160°C fan) or Gas Mark 4.
2. Peel and dice the potato, then boil in a saucepan of water for 8–10 minutes until tender.
3. Dice the red pepper and finely chop the spring onions.
4. Heat the olive oil in a frying pan.
5. Fry the spring onions for 1–2 minutes, then add the red pepper and cook for a further 2 minutes.
6. Drain the cooked potato and add it to the frying pan with the vegetables.
7. Finely chop the parsley and set aside.
8. Crack the eggs into a bowl and check them.
9. Beat the eggs and then stir in the parsley, salt, and pepper.
10. Pour the egg mixture into the pan with the vegetables and stir gently to combine.
11. Transfer to an ovenproof dish if the frying pan is not oven-safe.
12. Bake in the oven for 10–12 minutes until the eggs are just set.
13. Sprinkle the grated cheese on top during the final 2–3 minutes of baking, if using.
14. Remove from the oven, allow to cool slightly, then cut into wedges and serve warm.
