Portobello Burger with Herby Potatoes

No Beef? No problem. This Vegan style burger will satisfy the carnivore in you! Using Portobello mushrooms is like using a beef steak! The Herby potatoes are a truly wonderful companion for this burger.

This is what you will need for this recipe: 🥣 🥄

Ingredients 🍔🍄🧅🧄🥔🍅🥬🍯🧂
• Mezonot Burger Bun
• 1 Large Portobello Mushroom
• Non-Stick Cooking Spray
• ½ Red Onion
• 15ml Olive Oil (1 Tablespoon)
• 2.5ml Balsamic Vinegar (½ Teaspoon)
• 1 Garlic Clove, crushed
• 2.5ml Dried Thyme (½ Teaspoon)
• 2.5ml Dried Oregano (½ Teaspoon)
• Coarse Sea Salt, to taste
• 2.5ml Black Pepper (½ Teaspoon)
• 15ml Ready-Made Mayonnaise (1 Tablespoon)
• 5ml Honey (1 Teaspoon) and 2.5ml Mustard (½ Teaspoon)
• 1 Tomato
• 1/2 Lettuce Leaves
• 6 New Potatoes
• 15ml Olive Oil (1 Tablespoon)
• Mixed Herbs, to taste

Method 📖
1. Prepare onions: Slice the onion into half rings. Place it with the whole mushroom in a shallow bowl.
2. Make marinade: Whisk the olive oil, balsamic vinegar, garlic, thyme, oregano, salt and pepper. Pour over the mushroom and onions. Leave to marinate for a few minutes.
3. Prepare potatoes: Halve the new potatoes, drizzle with olive oil, sprinkle with mixed herbs and bake at 180°C (350°F)for 30 minutes.
4. Prepare tomato and sauce: Slice the tomato into rounds. Mix the mayonnaise with the honey (and mustard if using), then set aside.
5. Cook onions and mushroom: Heat a pan and spray with non-stick cooking spray. Add the marinated mushroom and onions and cook for about 4 minutes per side, until softened, then remove from the pan.
6. Prepare bun: Slice bun in half. Spread the honey mayonnaise on the inside.
7. Assemble burger: Layer the lettuce, onions, mushroom and tomato inside bun.
8. Serve: Remove the potatoes from the oven and serve on the side. Enjoy immediately.

Serve hot as a quick, colourful and satisfying lunch.

Don’t Forget! 📌

Leave the mushroom as long as you dare to fry in the pan, only then, flip over. An idea is that when some water (juices) start coming out of the mushroom, it is time to flip it. For this burger, you may want to add some ready made sauces like Chimichurri or Garlic Aioli.
