For this recipe, don’t expect the usual sponge cake with an orange flavour. This cake becomes more of a pudding as it is drenched in a deep syrupy orange infusion.

Ingredients for the Cake 🍊🍰🥚🌾🍬🥛🍯
2 Eggs
100g Sugar (½ Cup)
90g Flour (¾ Cup)
10ml Baking Powder (2 Teaspoons)
125ml Milk (½ Cup)
Zest of 1½ Oranges
100ml Vegetable Oil (⅓ Cup)

Ingredients for the Orange Sauce 🍊🍬
50g Sugar (¼ Cup)
100ml Orange Juice (⅓ Cup)
80ml Water (⅓ Cup)

Method 📖
1. Preheat oven: Turn the oven on to 180°C (350°F) and grease a cake tin.
2. Check eggs: Crack eggs into glass bowl and check it.
3. Whisk base: Whisk the eggs and sugar until pale and creamy.
4. Add dry ingredients: Fold the flour and baking powder gently into the egg mixture.
5. Heat liquids: In a saucepan, gently heat the milk, orange zest and vegetable oil until just boiling.
6. Combine mixture: Carefully pour the hot liquid mixture into the cake batter and stir gently until smooth.
7. Bake: Pour the mixture into the prepared tin and bake for 25 minutes.
8. Prick cake: Remove from the oven and use a knife to prick the cake all over.
9. Make sauce: Heat the sugar, orange juice and water until the sugar has fully dissolved.
10. Soak cake: Pour the hot orange sauce over the cake while it is still warm.
11. Rest: Leave overnight to allow the orange flavour to fully develop.
12. Serve: Dust with icing sugar before serving.
