This vibrant, spice-laden Moroccan vegetable stew brings the soul of North African cooking to your kitchen—no tagine required! Although a tagine (a North African Clay or Ceramic Pot with a cylindrical lid to circulate steam) is an amazing vessel to cook in ) the flavours in this recipe are slow cooked and well prepared.

This is what you will need for this recipe: 🥣 🥄
Ingredients 🥕🍆🍋🥒🫑🍅🥣🌾🍯🧄🌿
• 15ml Olive Oil (1 Tablespoon)
• ½ Aubergine, diced
• 125g Couscous (¾ Cup)
• ½ Lemon, diced (Including skin)
• 3 Dried Apricots, sliced
• 3 Dates, sliced
• 2.5ml Ground Cumin (½ Teaspoon)
• 2.5ml Ground Coriander (½ Teaspoon)
• 2.5ml Ground Cinnamon (½ Teaspoon)
• 15ml Tomato Paste (1 Tablespoon)
• 1 Courgette, sliced
• 1 Red Pepper, chopped
• 150ml Vegetable Stock (⅔ Cup)
• 200g Canned Chickpeas (1 Cup)
• Pinch Salt and Black Pepper, to taste
Method 📖
1. Cook aubergine: Cut the aubergine into medium-sized pieces, heat the olive oil in the saucepan, and cook slowly until softened.
2. Prepare couscous: Cook the couscous according to the packet instructions, then set aside.
3. Add lemon and fruit: Dice the lemon, including the skin, and add it to the aubergine with the sliced apricots and dates.
4. Add vegetables and spices: Add the courgette and red pepper, then stir in the cumin, coriander, cinnamon and tomato paste. Mix gently.
5. Add stock: Pour in the vegetable stock and bring to the boil.
6. Simmer: Reduce the heat and simmer for about 10 minutes until the vegetables are tender.
7. Add chickpeas: Drain the chickpeas and add, bring to the boil again, and season with salt and pepper.
8. Serve: Spoon the vegetables over the couscous and enjoy.
You can also add raisins or other vegetables to the saucepan/tagine.
