Mac ‘n Cheese is a family favourite, but we need to make cooking a bit more exciting and healthier, without compromising on flavour. A recipe for Mushroom and Macaroni Muffins transforms comfort food into bite-sized goodness. Imagine, tender macaroni in a creamy, cheesy sauce, enhanced with the earthy depth of mushrooms, then baked into crispy, golden perfection. These muffins are savory, satisfying, and delightfully portable—perfect for snacking, brunch, or an unconventional twist on dinner.

Ingredients 🍄🧈🧄🧂🥛🥚🧀
• 125g Mushrooms (1½ Cups, sliced)
• 1 Knob of Butter or Margarine (approx. 1 Tablespoon / 15 g
• 1 Clove Garlic, peeled and crushed
• Sea Salt and Black Pepper, to taste
• 125ml Double Cream (½ Cup)
• 3 Eggs
• 125g Cheese, grated (1 Cup)
• 125g Macaroni Pasta (1 Cup, uncooked)

Method 📖
1. Preheat the oven to 190°C (170°C fan) or Gas Mark 5.
2. Slice the mushrooms and stir-fry them in a knob of butter or margarine over medium heat.
3. Peel and crush the garlic, then add it to the mushrooms.
4. Season with sea salt and black pepper to taste.
5. Crack the eggs into a mixing bowl and check. Beat them together with the cream and half of the grated cheese.
6. Add the egg and cream mixture to the mushrooms and stir well.
7. Cook the macaroni according to the instructions on the packet. Drain well.
8. Stir the cooked macaroni into the mushroom sauce mixture.
9. Grease a muffin tin lightly with butter or oil.
10. Spoon the mixture evenly into each muffin holder.
11. Top with the remaining cheese.
12. Bake for 25 minutes, or until golden and set.
13. Remove from the oven and allow to cool slightly before serving.

The muffins will bake into shape as they become dryer due to the cooking in the oven. The flavours are amazing!
