This classic French soup was known as ā€œEvery French Housewife’s soupā€. This soup is both rustic and elegant. The herbs used make it a perfectly balanced tasty soup.

Ingredients šŸ„”šŸ§…šŸ§„šŸ„¬šŸ§‚šŸŒæ
• 1 Large Leek or 2 Small Leeks
• 3 Potatoes
• ½ Brown Onion
• 1 Garlic Clove
• Dried Thyme, to taste
• 750ml Water (3 Cups)
• Parev Chicken ConsommĆ©
• Maldon Salt, to taste
• Black Pepper, to taste
• Olive Oil, for frying

Method šŸ“–
1. Prepare vegetables: Peel and roughly chop the potatoes into chunks. Peel and slice the onion. Peel and crush the garlic. Slice the leek into small pieces.
2. Soften base: Add a little olive oil to a saucepan and gently fry the onion until slightly soft. Add the garlic and leeks and cook gently for a few minutes, taking care not to let them burn.
3. Add liquid: Pour in the water, then add the potatoes, thyme, salt, pepper and parev chicken consommĆ©.
4. Simmer soup: Bring the soup to the boil, then reduce the heat and simmer until the potatoes are soft.
5. Blend: Turn off the heat and allow the soup to cool slightly. Use a handheld blender to blend until smooth.
6. Serve: Serve hot. Delicious with homemade croutons on the side.

If you don’t have Thyme, you can use Sage, Dill or even dried Oregano. You can add some toasted breadcrumbs or even make some crunchy croutons to top this soup.
