The stem’s uses: Chopped into cakes, biscuits, or spooned over ice cream. Adds a luxurious texture and gentle spice. The powders uses: Ideal for spice blends, cookies, and dry rubs. It’s the backbone of many classic ginger biscuit recipes.

Ingredients 🍪 🧈🍬🥄🌾
Ingredients for Biscuits
• 225g Flour (1¾ Cups)
• 150g Demerara Sugar or Brown Sugar (¾ Cup)
• 1 Tablespoon Ground Ginger
• 1 Teaspoon Bicarbonate of Soda
• 100g Butter or Margarine (½ Cup)
• Pinch of Salt
• 1 Egg
• 1 Tablespoon Milk or Soya Milk

Ingredients for Filling
• 60g Butter or Margarine (¼ Cup)
• 60g Soft Cheese (¼ Cup)
• 100g Icing Sugar (¾ Cup)

Method 📖
1. Preheat the oven: Set the oven temperature to 180°C (350°F).
2. Prepare the dry mixture: Add the flour, sugar, ginger, bicarbonate of soda, & a pinch of salt to a large mixing bowl.
3. Incorporate the fat: Add the butter or margarine. Use your fingertips to rub it into the dry mixture until it resembles breadcrumbs.
4. Prepare the egg: Crack the egg into a small bowl and check. Beat thoroughly. Add the milk. Combine.
5. Form the dough: Pour the egg and milk mixture into the breadcrumb mixture. Stir and knead gently until a soft dough forms.
6. Line the tray: Place a sheet of parchment paper onto a baking tray.
7. Shape the dough: Scoop a heaped Tablespoon of the dough. Roll into a ball using your palms.
8. Arrange the biscuits: Place the balls evenly spaced on the lined baking tray.
9. Bake the biscuits: Bake in the preheated oven for 12 minutes. Remove and allow to cool completely on a wire rack.
10. Prepare the filling: Add the butter or margarine and soft cheese to a bowl. Beat with an electric beater until smooth.
11. Add the sugar: Add the icing sugar using a spoon. Mix gently by hand to combine. Do not use the electric beater to prevent the filling from becoming runny.
12. Assemble the biscuits: Spread or pipe the filling onto the flat side of one biscuit and sandwich with another.
13. Chill the biscuits: Place the assembled biscuits in the fridge for 20 minutes or until the filling has firmed.
