Fruity Flapjacks
Classic with a Fruity twist

A chewy golden hug of healthy oats, jam packed with lots of lovely fruit. Flapjacks are a comforting British Traybake. Some call it oatmeal squares because of the shape they are cut into. This recipe is loaded with everyone’s favourite dried fruits: cranberries, raisins, dried mango and apricot.

Ingredients 🍯🥣🥚🥭🍑🍇🌾
•100g Oats (1 Cup)
• 1 Teaspoon Cinnamon (1 Teaspoon)
• 1 Teaspoon Ginger (1 Teaspoon)
• 250g Flour (2 Cups)
• 1 Egg
• 140g Brown Sugar (¾ Cup)
• 100g Margarine (7 Tablespoons)
• 15ml Honey (1 Tablespoon)
• Dried Mango, chopped
• Dried Apricots, chopped
• Dried Cranberries and Raisins
Method 📖
1. Heat oven: Preheat to 180°C (350°F).
2. Prepare dish: Grease your foil or glass dish with a little margarine.
3. Melt base: Melt the margarine with the honey in a saucepan, then turn off the heat.
4. Add dry ingredients: Stir in the sugar, cinnamon, ginger, oats and flour until fully combined.
5. Add fruit: Chop the mango and apricots into small pieces and add them with the cranberries and raisins.
6. Add egg: Crack and check the egg, then mix it into the mixture until blended.
7. Fill dish: Using the spatula, scrape into the greased dish, flatten the top and level it out.
8. Bake: Bake for 20 minutes.
9. Slice: Remove from the oven and slice into squares while still hot.

Don’t Forget! 📌
Slicing the flapjacks while they are still hot is an important step in the recipe. If you allow it to harden, it may become crumbly and not cut out into nice squares. You can also change up the dried fruits by using some coconut, or even nuts in this recipe. There are lots of variations. One could even use chopped up apples, or pineapples. The important thing is that whatever you use, will be delicious!
