Ingredients for the Falafel 🥫🧄🧅🌿🌰🌶️🧂🍞🛢️
• 1 Can Chickpeas (400 g / 14 oz)
• 2 Garlic Cloves
• 1 Brown Onion
• 2 Tablespoons Fresh Parsley
• 1 Teaspoon Ground Coriander
• ¾ Teaspoon Ground Cumin
• ½ Teaspoon Salt
• ½ Teaspoon Black Pepper
• 3 Tablespoons Plain Flour (or All-Purpose Flour)
• Vegetable Oil (for baking)
Ingredients for the Little Salad 🥒🌿🍅🍋🧂
• Diced Cucumber
• Diced Red Pepper
• Mint Leaf
• Diced Tomatoes
• Squeeze of Lemon
• Olive Oil
• Salt
• Pepper
Method 📖
1. Heat the oven: Preheat to 190°C (375°F).
2. Prepare the garlic: Peel the garlic cloves and place them in a mixing bowl.
3. Chop the onion: Peel and roughly chop the onion; add to the bowl.
4. Add herbs and spices: Add parsley, ground coriander, cumin, salt, and black pepper.
5. Blend the mixture: Use a hand blender to pulse until finely chopped.
6. Drain the chickpeas: Empty the can and discard the liquid; place chickpeas in a separate bowl.
7. Mash the chickpeas: Mash with a fork, keeping a slightly chunky texture.
Combine mixtures: Add the blended onion mixture to the mashed chickpeas and mix well.
8. Add the flour: Stir in the flour gradually until a thick paste forms.
9. Shape the falafel: Roll the mixture into small, even-sized balls.
10. Prepare the tray: Line a baking tray with greaseproof paper and lightly brush with vegetable oil.
11. Bake the falafel: Place the balls on the tray, bake for 10 minutes, turn gently, then bake for 10–12 more minutes until golden.
12. Make the salad: Finely dice cucumber, red pepper, mint, and tomatoes; season with salt and pepper, then dress with olive oil and lemon juice

Falafel can be served with lettuce, tomatoes, red onion, peppers or any other salad of your choice. Ideally you want some lovely fresh pita bread to insert your falafel balls into along with some nice hummus, either store bought or home made.
