Ingredients 🍪🧈🍚🍋🥚🥛
For the Cheesecake
• 250g Digestive Biscuits or Graham Crackers (2 Cups, crushed)
• 90g Melted Butter (6 Tablespoons)
• 680g Cream Cheese (3 Cups)
• 150g Caster Sugar (¾ Cup)
• 20g Plain Flour (2½ Tablespoons)
• 1 Teaspoon Vanilla Extract (1 Teaspoon)
• Zest of 1 Full Lemon
• 2 Eggs
• 1 Egg Yolk
• 60ml Whole Milk or Double Cream (¼ Cup)
For the Blueberry Sauce 🍋🫐🍚
• 200g Fresh or Frozen Blueberries (1½ Cups)
• 100g Sugar (½ Cup)
• Juice of 1 Lemon (2–3 Tablespoons)
Method 📖
1. Preheat the oven to 160°C (325°F), and line a cake tin with parchment paper.
2. Melt the butter in the microwave or in a saucepan over low heat.
3. Crush the biscuits using a food processor or place them in a ziplock bag and crush with a rolling pin until fine.
4. Combine the crumbs with the melted butter and press into the prepared cake tin. Chill in the fridge to firm up.
5. Make the filling: In a large bowl, add the cream cheese, caster sugar, flour, vanilla extract, and lemon zest. Beat until smooth.
6. Add eggs: Crack eggs into small glass bowl and check. Into the large bowl. mix in the eggs, egg yolk, & milk (or cream). Scrape down the sides of the bowl. Mix until fully combined.
7. Grease the tin rim lightly with a little butter. Pour the filling over the chilled biscuit base.
8. Bake for 1 hour, or until the centre still jiggles slightly but the edges are set.
9. Cool gradually: Turn off the oven and leave the cheesecake inside with the door slightly open for at least 1 hour.
10. Chill thoroughly: Let the cheesecake cool completely at room temperature, then refrigerate for at least 4 hours (or overnight).
11. Make the blueberry sauce: In a saucepan, combine the blueberries & sugar. Bring to a boil.
12. Simmer gently until sugar dissolves & most blueberries remain whole. Let cool completely.
13. Add lemon juice to the cooled sauce, 1 teaspoon at a time, until the flavour is balanced to your taste.
Once both the cheesecake and blueberry sauce are chilled, spoon the sauce over the cake and serve.

Other fresh fruits could adorn the top of the cheesecake, for example, strawberries or even mango slices and pulp. Another favourite is lemon curd. Yum!
