This is what you will need for this recipe: 🥣 🥄

Ingredients
• 100g Butter or Margarine (7 Tablespoons)
• 140g Caster Sugar (⅔ Cup)
• 1 Medium/Large Egg
• 80g Plain Flour (1½ Cups)
• 20g Porridge Oats (¼ Cup)
• ½ Teaspoon Baking Powder
• ½ Teaspoon Salt

Optional Add-ins
• 30g Stem Ginger, finely chopped (2 Tablespoons)
• 80g Chocolate Chips (½ Cup)
• 80g Raisins (½ Cup)

Method 📖
1. Preheat the Oven: heat your oven to 180°C / 350°F. Line a baking tray with parchment paper to prevent sticking and make clean-up easier.
2. Cream Butter and Sugar: Place the butter and caster sugar in a large mixing bowl. Using a fork, beat the mixture until light, fluffy, and pale in colour.
3. Add the Egg: Crack and check the egg into a small bowl. Beat the egg into the butter and sugar mixture until fully incorporated.
4. Mix Dry Ingredients: Sift the plain flour, baking powder, and salt into the mixture. Stir in the porridge oats. You can use a wooden spoon or spatula for this step. Continue mixing until a soft dough forms.
5. Add Optional Ingredients: Gently fold in any optional add-ins you’ve chosen (stem ginger, chocolate chips, raisins) until evenly distributed throughout the dough.
6. Form the Cookies: Use a spoon or cookie scoop to drop tablespoon-sized portions of dough onto the prepared baking tray. Make sure to leave some space between each portion to allow the cookies to spread as they bake.
7. Bake the Cookies: Place the tray in the preheated oven and bake for 10-12 minutes, or until the edges of the cookies are golden brown. Keep an eye on them towards the end of baking to prevent over-baking.
8. Cool the Cookies: Allow the cookies to cool on the tray for 5 minutes to firm up. Then, transfer them to a wire rack to cool completely. Enjoy your cookies once fully cooled, or store in an airtight container.
